Hhhhmmm, what have I built today? Well so far an A-Wing fighter, Vader's TIE fighter and a Naboo Flash Speeder - you just got to love the Lego shop sales 
Couple of days back it was the Emerald Night - just need to add the motor and other functions to it and it will be complete!!
Next on the list? Not sure got a few kits to choose from as well as some build my own ideas on the go...
